Africa is not only a continent full of great scenery, animals and minerals. It is also a continent that offers great culinary tastes that the world has not tasted. Every country in Africa is made up of communities that offer great food.


Pan-Fried Fish Balls

When fish is plentiful in Senegal, cooks often make boulettes de poisson, according to African food historian Jessica B. Harris. The little round fish cakes are usually flavored with garlic, parsley, and chiles browned in a pan and served with spicy tomato sauce. This simplified version spikes up prepared cocktail sauce with chili powder.


Fish in Coconut Curry (Mtuzi wa Samaki)

Tanzania sits at a crossroads in the spice trade routes from India. That’s why Indian spices ended up in so many Tanzanian dishes like this fish curry. The dish originated in Zanzibar but is now enjoyed all over the eastern coast of Africa. Coconut milk enriches the curry and gives it a tropical flavor. Serve over boiled yuca, potatoes, or rice.

Now that it is a known factor that African has a lot to offer in terms of dishes, one cannot help but wonder why continental food in hotels never has African dishes? Why can’t someone from Nigeria go to a hotel in New York and order Fufu? The answer could be that Africans are not doing themselves justice.

Have you ever asked yourself why there are more recognizable Italian restaurants than African restaurants in Nairobi? There are also more renowned Chinese than African restaurants, not just in Nairobi but in all major cities of Africa.

In Kenya as well as other African countries, the best reputed restaurants with African dishes are Ethiopian. Even more strange is the fact that all major hotels in Africa serve foreign dishes.

For African restaurants to succeed, the entire supply chain must be standardized to get a consistent taste that can lead to a marketable product.

As much as it is hoped that African dishes make it to continental menus so that Africans too can enjoy home away from home. Unfortunately there are circumstances where some have African dishes have been taken too far. Human head ending up on a dinner plate simply brings the walking dead into life.

Police arrested 11 people and closed a restaurant after two human heads wrapped in cellophane were discovered at a hotel restaurant that had been serving human flesh.

A tip-off led police to the macabre discovery in Anambra, Nigeria, with 11 people being arrested and AK-47 guns and other weapons being seized.

Human flesh was apparently being sold as an expensive treat at the restaurant, with authorities saying that roasted human head was even on the menu.

“I went to the hotel early this year, after eating, I was told that a lump of meat was being sold at N700, I was surprised,” a pastor who had visited the eatery said.
